INGREDIENTSFor the cookies
- 1/2 Cup unsalted butter, at room temperature
- 1/2 Cup vegetable oil
- 1/2 Cup granulated sugar
- 1/2 Cup powdered sugar
- 1 large egg
- 2 Teaspoons vanilla extract
- 1 chai tea packet
- 2 Cups all-purpose flour
- 1/2 Teaspoon baking soda
- 1/4 Teaspoon salt
For the icing
- 1 Cup powdered sugar
- 1/4 Teaspoon nutmeg
- 1/4 Teaspoon cinnamon, plus extra for garnish
- 1 Tablespoon eggnog
DIRECTIONS
For the cookies
Preheat the oven to 350 degrees F. Line a baking sheet with parchment paper.
In a stand mixer, beat the butter for 1 minute. Add the vegetable oil, granulated sugar, powdered sugar, egg, and vanilla, and beat on medium speed until everything is completely incorporated.
Cut the chai tea packet open and empty the crushed tea leaves into the batter, and beat to combine.
With the mixer on slow, add in the flour, baking soda, and salt, until well combined.
Refrigerate the dough for 1 hour.
Put tablespoon size scoops of cookie dough on to the baking tray, leaving 2 inches between each cookie. Press the dough evenly with your fingers until they are ¼-inch thick.
Bake for 8-10 minutes, until just golden. Let the cookies cool on the baking sheet.
For the icing
Whisk together the powdered sugar, nutmeg, cinnamon, and eggnog, until smooth.
