10 Tips For Tea

Tea is a wonderful thing. No matter what kind of tea you prefer it goes great with most things. Here are a few tips and tricks for a more tea filled life.
1. While there’s lots of detailed information about brewing times and temperatures, 1st and 2nd infusions, pre-heating cups and teapots etc, I think the biggest impact on whether you are going to enjoy your tea or not, can be simplified to this - if you are having any other tea besides green tea, you can use water that has just been boiled, all other teas, bar green, are very forgiving - if you are having green tea, wait for the water temperature to drop down to 90°C before you brew your tea. If you boil the kettle and then spend 5 minutes choosing your favourite cup, getting a little tea snack, or patting the dog, that should be the perfect temperature for green tea.
2. If you like Earl Grey, or any other tea that uses highly aromatic essential oils, the flavour will be more amazing if you store your tea in an airtight glass jar.
3. If you love Matcha tea, keep the powder in fridge! 
4. There are so many ways to cook with tea, but one of the best discoveries I’ve made is to simply swap any amount of water in a recipe, with strongly brewed and cooled tea. This works for both savoury and sweet recipes and let’s you create some amazing new flavour combinations with tried and true favourites.
5. Whenever a recipe asks to hydrate dried fruit, try using tea, it adds a subtle but delicious undertone.
6. Tea makes ice cream or sorbet feel a little bit fancier - I love coming up with new flavours based on tea. How about Earl Grey and Blood Orange Sorbet, Peppermint and Matcha, or Chamomile and Coconut Ice Cream? So good.
7. Tea works beautifully in jam making too, just swap out the water component with your favourite tea. 
8. I love making my porridge with tea - not all teas work in this case, anything too herby doesn’t quite fit the bill, but strongly brewed Breakfast Tea works a treat.
9. Tea is a fantastic ingredient for mixing drinks; either non-alcoholic, or for cocktails. At the simplest end of the scale you can add sparkling water and a squeeze of fresh citrus to any brewed and cooled tea, or if you want to really get fancy, you can make a reduced syrup from tea and add to your favourite cocktail. We have a local brewer that has even made stout beer based on our breakfast tea!
10. Always have tea exactly how you like it - there’s no right or wrong when tea is at the table in my books, but especially when you can allow the time to enjoy the ritual that tea drinking is, it can be a day changer. Here in the Barossa, I’ve always loved the country response of ‘let’s put the kettle on’, regardless of what the situation may be.

Make Sun Tea For Summertime!


Sun Tea is a family tradition for some. Steeped in the sun, every family has a variation. Here is a simple recipe to introduce to your family to. Start new traditions this summer!

Easy Sun Tea

The Fundamentals

2 quarts filtered water
6 organic tea bags (I like this kind)
Mint Leaves for Garnish (optional)

The Process

1. Place your tea bags in a medium size glass container that will hold two quarts of water.
2. Fill the glass container with filtered water.
3. Place on a window sill in your home for 8 to 12 hours in the sun.
4. Boom! Sun Tea! Store in the fridge and enjoy over ice and with mint leaves.
Enjoy a nice cold refreshing glass!

Cool off with a nice refreshing iced tea with floral undertones. Perfect way to relax in the sun!

Ingredients

regular-size hibiscus tea bags
3/4 cup sugar
navel orange, sliced
lime, sliced
3 cups ginger ale, chilled

Preparation

Bring 4 cups water to a boil in a 2-qt. saucepan. Remove from heat, and add tea bags. Cover and steep 10 minutes. Discard tea bags. Stir in sugar until dissolved; add orange and lime slices. Cover and chill 2 to 6 hours. Stir in ginger ale, and serve over ice.

Teas That Are A Must To Try


These teas are not your typical supermarket blends. These are a must try for the avid tea drinker.

ROOIBOS

Rooibos (pronounced “roy-boss”) comes from the leaves of the eponymous South African plant, and, says Lovell, the wild rooibos she uses in her No.1 Ladies Wild Redbush Tea has a “deep, rich berry flavor.” It’s harvested on horseback with machetes, and is name checked—as is Lovell herself—in Alexander McCall Smith’s novel Corduroy Mansions, where heroine Precious Ramotswe opines that “there is no problem so great that it cannot be solved by a cup of bush tea.”

PU-ERH

Pu-erh is an aged dark tea produced in China, and often blended with rose petals; the Rare Tea Cellar, naturally, ups the ante a little. “We’ve used these crazy wild roses from the highest mountains of the Middle East,” says Markus. “Pu-erh is traditionally very earthy, with almost a dirty farmyard taste, so bringing the sweetness of the finest roses to that is a complete game-changer. It’s not only aromatic but also really soothing—perhaps the ultimate wind-down drink.”

WHITE

White tea comes from the buds and young leaves of the tea plant, and has the highest antioxidant content of any tea. The Rare Tea Cellar’s Emperor’s Private Reserve Himalayan Dream is “about the most elegant tea you’ll taste,” says Markus. It’s brewed from the tips of young leaves, plucked solely under the light of a full moon. The result? “An ambrosia, with an aroma somewhere between a wild orchid and some kind of hedonistic blossom that shouldn’t exist in nature.” The stuff can command $8,000 per kilogram. (Or, a bargain, at $25 for three cups.)

Chai Limeade: Perfect Refresher For The Summer!



Summer is almost here! Cool off at the pool with this refreshing combination! It isn't the first combination that comes to mind but the combination of sweet, tart and spicy is just right.
Ingredients

  •  1 1/2 cups boiling water 
  • 3 chai tea bags, or more to taste 
  • 10 limes, juiced 
  • 1 lime, zested 
  • 4 cups ice, or as desired water, or as needed 
  • 1/4 cup white sugar, or to taste
Directions
Prep 10 m Ready In 15 m
  1. Pour boiling water into a mug and add chai tea bags. Allow tea to steep for at least 5 minutes. Remove tea bags.
  2. Combine lime juice and lime zest in a pitcher; add enough ice to fill pitcher halfway. Slowly pour chai tea over ice; stir. Add enough water to fill pitcher; stir in sugar.

Set aside. Season up to 3 pounds (1.5 kilograms) meat with salt, pepper, onion, and garlic powder, and place it in a Dutch oven. Pour the liquid over the seasoned meat and cook in a preheated 325°F (165°C) oven until the meat is fork tender, about 90 minutes.

Make a London Fog

A London Fog is certainly one of the tastiest tea beverages out there. Earl Grey Tea with a hint of sweetness and frothy steamed milk, it is one of our favorites! If you aren't a fan of Earl Grey, you can stray from a traditional London Fog and substitute your favorite tea in this recipe. 
Ingredients 
  • 3/4 cup or 6 ounces hot tea 
  • 1/4 cup or 2 ounces hot milk 
  • Optional: sweetener of your choice, or shot of Vanilla Coffee Syrup  
Directions 
Place the teabag in a mug with boiling water and allow it to steep for 5 minutes. Remove the teabag, add a shot of vanilla syrup and/or sweeten the tea, as desired. While the tea is steeping, heat the milk in a pan or in the microwave until steaming. Use a milk frother for about 15 seconds, until the milk doubles in size and is super foamy. Pour the milk and froth over the hot tea and stir gently. Enjoy!

Taylor Swift's Recipe for Chai Tea Eggnog Cookies

INGREDIENTS
For the cookies
  • 1/2  Cup  unsalted butter, at room temperature
  • 1/2  Cup  vegetable oil
  • 1/2  Cup  granulated sugar
  • 1/2  Cup  powdered sugar
  • 1  large egg
  • 2  Teaspoons  vanilla extract
  • 1  chai tea packet
  • 2  Cups  all-purpose flour
  • 1/2  Teaspoon  baking soda
  • 1/4  Teaspoon  salt
For the icing
  • 1  Cup  powdered sugar
  • 1/4  Teaspoon  nutmeg
  • 1/4  Teaspoon  cinnamon, plus extra for garnish
  • 1  Tablespoon  eggnog
DIRECTIONS
For the cookies
Preheat the oven to 350 degrees F. Line a baking sheet with parchment paper.
In a stand mixer, beat the butter for 1 minute. Add the vegetable oil, granulated sugar, powdered sugar, egg, and vanilla, and beat on medium speed until everything is completely incorporated.
Cut the chai tea packet open and empty the crushed tea leaves into the batter, and beat to combine.
With the mixer on slow, add in the flour, baking soda, and salt, until well combined.
Refrigerate the dough for 1 hour.
Put tablespoon size scoops of cookie dough on to the baking tray, leaving 2 inches between each cookie. Press the dough evenly with your fingers until they are ¼-inch thick.
Bake for 8-10 minutes, until just golden. Let the cookies cool on the baking sheet.
For the icing
Whisk together the powdered sugar, nutmeg, cinnamon, and eggnog, until smooth.
Spoon the icing over the cooled cookies. Sprinkle with cinnamon before serving.
