Green Tea Mojito

Ingredients
  • ½ cup sugar
  • 2 green tea bags
  • 3 tablespoons freshly squeezed lime juice
  • 12 mint leaves
  • 2 cups sparkling water
Method
1. In a small saucepan, dissolve the sugar in ½ cup of water on a medium heat.2. Once the syrup begins to boil, remove it from the heat and add the two tea bags.  Steep 7-10 minutes. Here’s how: Place 4 tablespoons black tea leaves in a pot of warm (not boiling) water and steep for 5 minutes. Strain to remove the leaves and stir in 1/2 cup brown sugar until it dissolves. Set aside. Season up to 3 pounds (1.5 kilograms) meat with salt, pepper, onion, and garlic powder, and place it in a Dutch oven. Pour the liquid over the seasoned meat and cook in a preheated 325°F (165°C) oven until the meat is fork tender, about 90 minutes.

  • 1/4 cup thinly sliced fresh mint leaves

  1. In a large bowl, combine the mint, lavender and rosemary. Add boiling water. Cover and steep for 4 minutes. Strain tea, discarding mint mixture. Stir in honey if desired. Serve immediately.

Earl Grey Tea Breakfast Cupcake Recipe

4 large free range eggs
3 tbs earl grey milk
For the buttercream
300g softened unsalted butter
675g icing sugar, sifted
6 tbsp earl grey milk
For the Burnt Buttered Toast
3 slices of brown bread toasted and almost a little burnt
butter to spread on both sides

Green Tea Matcha Eton Mess With Raspberries and Blueberries Recipe


Green Tea Matcha Eton Mess With Raspberries and Blueberries is a simple and sweet concoction that has become a summertime favorite. Create this Green Tea Matcha Eton Mess without concerning yourself with the difficulty of making meringues, they are broken up in this dish so it won't matter if they're not perfect. Enjoy this sweet summer green tea matcha recipe below.

  • 2 large egg whites at room temperature
  • 8 tbsp superfine (caster) sugar
  • 1 tsp vanilla extract
  • 300g blueberries
  • 300g raspberries
  • 350 mL heavy cream, chilled
  • 2 tsp matcha green tea powder
  • 2 tsp confectioner’s sugar
  • Mint leaves, to garnish
1. Preheat the oven to 100°C. Cover a baking sheet with parchment.
2. Beat the egg whites until foamy, then add 6 tbsp of the superfine sugar, a spoonful at a time, beating well between each addition. Add the vanilla and the remaining sugar until the mixture is thick and glossy.
3. Spoon six equal blobs on the baking sheet and bake for three hours. Turn off the oven and let it cool for about an hour without opening the door.
4. Rinse the fruit and dry with kitchen paper. Reserve a few berries for decorating and gently press the rest with a fork to release some of the juice.
5. Whip the cream with the matcha powder and the confectioner’s sugar until thick but still soft. Break the meringues into bite-sized pieces, place them in a large mixing bowl, add the matcha whipped cream and fold in the berries with their juice to give a marbled effect.
6. Spoon the mixture into sundae glasses, top with the remaining berries and garnish with mint leaves. Serve as soon as possible.
