National Iced Tea Month | Rhubarb Iced Tea

Summer’s here and with it comes the opportunity to celebrate the second most consumed beverage in the world, tea. June is National Iced Tea Month so we would like to take this opportunity to share our favorite iced tea recipes all month long. Not only is Iced Tea refreshing on a hot summer’s day, it’s also got some great health benefits and there are lots of different flavors to enjoy. Today let's try this Rhubarb Iced Tea recipe, provided below.
Ingredients
  • 8 stalks rhubarb, cut into 3-inch lengths
  • 8 cups water
  • 1/3 cup sugar, or to taste
  • Fresh mint sprigs, for garnish
Directions
In a large saucepan, combine rhubarb and 8 cups water; bring to a boil, and simmer for 1 hour. Strain the liquid, add sugar to taste, stirring to dissolve, and allow to cool. Serve over ice with a sprig of mint.
