Thai Iced Tea Popsicles

We are celebrating Tea-sicles all week! Today's Tea-sicle recipe is Thai Iced Tea Popsicles. These tea-sicles are the perfect treat, refreshing light and sweet. Again, by using coconut milk you get the creamy texture desired without the separation of water like in dairy milk. Use t-sleeve to brew your tea for a mess-free tea steeping experience. Enjoy this Thai Iced Tea Popsicle recipe below.
What You Will Need
  • 2 bags black tea, chai tea, or something specifically labeled for Thai iced tea
  • 2 star anise
  • 1 leftover vanilla bean
  • several sprigs of fresh mint
  • approximately 1/2 cup sweetened condensed milk
  • approximately 1/2 cup full fat coconut milk
  • squeeze of fresh lime (optional)
Instructions
  1. Add 1 1/2 cups boiling water to the tea. Let it steep with the star anise, vanilla bean, and mint leaves. Crush the mint a bit with the back of a spoon to release its oils.
  2. Set aside and let the tea sit until cooled. Strain out the spices and mint from the cooled tea.
  3. Add the condensed milk, the coconut milk, and the lime juice, if using. Whisk to combine.
  4. Taste your finished mixture, and if it's as you like it, fill the popsicle molds, leaving room at the very top for expansion.
  5. Freeze until firm.

Chia Coconut Pudding Popsicles

We are celebrating Tea-sicles all week! Starting our Tea-sicle celebration is this Chia Coconut Pudding Popsicle. With the creaminess of the coconut milk mixed with fresh fruit, honey and chia seeds this is a splendid way to cool down on a warm day. Worried about the way milk freezes, don't because by using coconut milk you get the creamy texture desired without the separation of the water, like in dairy milk creating an icy milk which is unappealing. Enjoy this Chia Coconut Pudding Popsicle recipe provided below.
What You Will Need
  • 1 can (14-15 oz) coconut milk (I used full fat)
  • 1/4 cup chia seeds
  • fresh fruit of your choice
  • 1 Tbsp sugar or honey (optional)
  • 1/2 tsp vanilla or almond extract (optional)
Instructions
  1. Pour the coconut milk into a small bowl. Make sure to get out all the thickened stuff inside the can. Give it a whisk or a stir to combine well.
  2. Stir in the chia seeds and let sit, stirring once or twice, for about 30 minutes, to allow the seeds to expand.
  3. Add a little bit of the coconut mixture to the bottom of each of 5 popsicle molds.
  4. Drop some of the fruit in on top. If your fruit is too big to fit, chop it up.
  5. Continue adding more coconut mixture, then more fruit until the molds are almost full. Rap the mold firmly against a hard surface to encourage the pudding to fill all the nooks and crannies in and around the fruit.
  6. Insert popsicle sticks into the molds, they will stand up by themselves.
  7. Top off the molds if there is any room in them.
  8. Freeze for several hours until completely frozen.
  9. To remove from the molds, fill a sink with hot water, just deep enough to immerse the mold up to, but not over, the rim, and hold the mold in the hot water for about 15 seconds to loosen the pops.
  10. Pull the popsicles out of the mold and enjoy.
  11. If you want to save the pops for later, wrap them in waxed paper and place in zip lock baggies.

Blueberry Arnold Palmer

Arnold Palmer is considered by many as one of the greatest professional golfers. He is the man to thank if you're a fan of the iced tea and lemonade combination, also known as an Arnold Palmer. Although this beverage is in no way new, it has become recently popular among tea enthusiasts. Try this Blueberry Arnold Palmer by combining blueberry tea, lemonade and fresh blueberries. Read about brewing your tea via the sun for your Blueberry Arnold Palmer, below.
First I make sun tea. I'm sure most of you have done this before, but since I have had a few questions about it I thought I'd explain. Sun tea is simply tea that steeps in the sunlight. I let mine sit in the direct sunlight for at least an hour. I usually forget that it's on my front porch, though, and it sits for several hours. I love this method because the prep is super simple and my mom makes it this way. :)

Relieve Puffy Eyes with Tea Bags

Save some money while naturally relieving your puffy tired eyes with tea bags. Tea is amazing because its delicious, affordable and is full of health benefits for the inside and out. Yes, some good sleep would help with puffy eyes but that's not always an option. Use your t-sleeve for making a mess-free cup of tea without burning your fingers. Follow the steps below to relieve puffy eyes with tea bags.

What you'll need:
  • Two tea bags (I find green and black tea bags containing caffeine to be the most effective)
  • A mug of hot water
  • A plate, container, or plastic sandwich bag
Step One
Take the two tea bags and steep them in hot water for 3-5 minutes.
Step Two
Take the tea bags out and put them in your container of choice (I used a plate). Leave them in the refrigerator for 20 minutes or until cold. While the tea bags are cooling down, you can relax by drinking the mug of delicious tea you just made - yum!
Step Three
Take the tea bags out. Gently squeeze out any excess liquid until the bags are damp and not dripping wet.
Step Four
Lay down and put the tea bags over your eyes. Leave them on for 15-30 minutes. Remove and carefully rinse off any tea stains on your face.
