Seeping Time on Tea

When you are seeping your tea bag, ever wonder how long is the perfect amount of time to let the bag sit? Between white tea, black tea, and green tea, researchers in Malaysia have studied what seeping duration yields the maximum amount of antioxidants in your tea: 
Researchers in Malaysia decided to look at the antioxidant levels in three types of tea – white, green and black – as well as what affect the preparation of the beverage might have. What they learned was that the most effective steeping temperature and time was dependent on the type of tea. 
In white tea, antioxidant properties were affected by time (longer time means more antioxidants) and not temperature. In black tea, they found that steeping the tea for a shorter period of time was best, and increasing the time in hot water reduced antioxidant activity.  For green tea, steeping in cold water yielded the most antioxidants.

Ingredients
3 cups of water
Juice of half a lemon
1 cinnamon stick
3 slices (1/4 inch thick) of fresh ginger
¼ tsp cloves
½ tbsp. turmeric
1 pinch cayenne (start with this and add more to taste)
1 ½ tbsp raw honey (can add more or less to achieve desired sweetness)
Directions
1. Add all ingredients (except honey) to a pot and bring to a boil.
2. Once boiling, reduce heat and let simmer for about 10 minutes.
3. Add honey and stir, adding more if necessary.
4. Pour tea through a strainer and drink while warm.
5. Rest.

Homemade Chai Tea Latte

What could be cozier on Christmas Day than a chai tea latte? 
Ingredients
Chai Tea:
  • 2 cups water
  • 2 black tea bags
  • 2 whole cloves
  • 1 tsp ground cinnamon
  • ½ tsp ground ginger
  • ½ tsp cardamom
  • ½ tsp ground nutmeg
  • ⅛ tsp ground allspice
  • 2 TB pure maple syrup 
Latte:
  • ½ cup chai tea (recipe above)
  • ¾ cup whole milk
  • 1 TB pure maple syrup
  • pinch of ground cinnamon
Instructions
For the chai tea: In a medium-sized saucepan, bring the water and spices to a boil. Whisk the spices in the water. Once the water reaches a boil, turn off the heat and allow the spices to steep in the water for 5 minutes. After 5 minutes, turn the heat back on and add the black tea bag and maple syrup. Return to a slight boil (the goal is a hot liquid for steeping). Once boiling, turn off the heat. Allow the tea bags to steep in the water and spices for 5 minutes. Remove the tea bags and strain the tea through a fine mesh sieve (like this). Reserve ½ cup of chai tea for the latte. Store the rest of the chai tea in the fridge up to two weeks for freshness.
For the latte: In a medium-size saucepan, bring the milk, maple syrup, and pinch of cinnamon to a slight boil (the sides of the milk will begin to bubble), stirring often. Once the sides of the milk begin to bubble, remove the pan from heat. Using an immersion blender (this is the trick to a frothy homemade latte), blend the milk until it's frothy.
Pour ½ cup of chai tea in a mug. Slowly add the warm, frothy milk to the tea. Sprinkle the top of the chai latte with an extra pinch of cinnamon, if desired.
Serve warm.

Renewing Clay Mask

Green Tea: Health-promoting Effects

Green tea has been present in human culture since it's discovery in approximately 3,000 B.C. in the People's Republic of China.  A recent study conducted at the University of Shizuoka investigated the long-term health benefits potentially from green tea including preventing cancer, diabetes, obesity, liver disease, and neurodegenerative diseases. 
Green tea contains various ingredients with specific health-promoting effects. For example, tea polyphenol catechins (Figure 1) are believed to exert protective effects against diseases such as cancer, obesity, diabetes, arteriosclerosis, neurodegenerative diseases, and tooth decay.1,47 They may also have antibacterial, antiviral, and hepatoprotective effects. Among the catechins, epigallocatechin gallate (EGCG) demonstrates the strongest bioactivity. The content of EGCG in green tea is higher than those in black tea and oolong tea, which may explain the superiority of green tea in terms of health benefits.7 Caffeine induces awakening, decreases the sensation of fatigue, and has a diuretic effect. Theanine and γ-aminobutyric acid lower the blood pressure and regulate brain function. Vitamin C exhibits antiscorbutic activity, prevents cataracts, and possibly boosts the immune system.7

A large body of scientific evidence has revealed the mechanisms by which green tea and EGCG exert beneficial effects on human health. Majority of scientific evidence based on cellular and animal experiments indicate that green tea can exert beneficial health effects. However, the evidence relating to its effects in humans remains inconclusive.

In this review, we focus mainly on the bioactivity of catechins, in particular on EGCG, which demonstrates the highest activity in most cases. We have mainly focused on the beneficial health effects of green tea on selected diseases such as cancer and diabetes, for which we have conducted basic experiments.

London Fog Recipe

One of the most delicious tea beverages out there: A London Fog. Earl Grey Tea with a hint of sweetness and frothy steamed milk. If you aren't a fan of Earl Grey, you can stray from a traditional London Fog and substitute your favorite tea in this recipe. 
Ingredients 
  • 3/4 cup or 6 ounces hot tea 
  • 1/4 cup or 2 ounces hot milk 
  • Optional: sweetener of your choice, or shot of Vanilla Coffee Syrup  
Directions 
Place the teabag in a mug with boiling water and allow it to steep for 5 minutes. Remove the teabag, add a shot of vanilla syrup and/or sweeten the tea, as desired. While the tea is steeping, heat the milk in a pan or in the microwave until steaming. Use a milk frother for about 15 seconds, until the milk doubles in size and is super foamy. Pour the milk and froth over the hot tea and stir gently. Enjoy!

  3. Blend until smooth.
  4. Pour the tea and apple mixture into 2 mugs and top with the milk mixture from the sauce pan.
  5. Garnish with cinnamon.

Sparkling Apple Tea for Thanksgiving

Thanksgiving is coming! Serving a Sparkling Apple Tea at your festive feast is a guaranteed crowd pleaser. Enjoy the holidays and this Sparking Apple Tea recipe below.
Ingredients
  • 2 black tea bags
  • 2 (3-inch) cinnamon sticks (plus more for garnish if desired)
  • One 25.4 ounce bottle sparkling apple cider
  • 1 ounce fresh juice from about 2 lemons
  • Garnish: additional cinnamon sticks
Directions
  1. Place tea bags and cinnamon sticks in a large heatproof measuring cup, fill with 2 cups (16 ounces) boiling water. Let steep for at least 10 and up to 20 minutes. Remove tea bags and cinnamon sticks and chill in the refrigerator.
  2. In a large pitcher combine sparkling cider, tea, and lemon juice. Stir gently and serve immediately with ice. Garnish with cinnamon sticks if desired.
